You know those extra veggies leftover from dinner or sitting out on the counter? A simple quiche is a quick and delicious way to use up those vegetables!
2 pre-made pie crusts
Chopped up veggies (I used a red onion, broccoli, cauliflower, and kale)
A few slices of cheddar cheese
A dozen eggs
1/2 a pint of half and half
Preheat oven to 400F.
Cook bacon and bake all of the veggies except for the kale on a baking sheet with olive oil.
Meanwhile, crack the eggs in a bowl. Pour in half and half. Whisk!
Sprinkle cheddar cheese on the bottom of the pie crusts.
Pour egg mixture into the two pie crusts evenly.
Crumble up the cooked bacon. Spinkle in cooked veggies and the kale into the egg mixture. I didn't put a specific amount of veggies -- just wing it! Whatever looks good.
Add a little salt and pepper to taste.
Bake in the oven until eggs are done. About 20 minutes -- not specific so keep checking!
Serve up with mashed avocado.
