Extra veggies? Here's an idea!

You know those extra veggies leftover from dinner or sitting out on the counter? A simple quiche is a quick and delicious way to use up those vegetables!


Ingredients:

  • 2 pre-made pie crusts

  • Chopped up veggies (I used a red onion, broccoli, cauliflower, and kale)

  • Bacon

  • A few slices of cheddar cheese

  • A dozen eggs

  • 1/2 a pint of half and half

Instructions:

  • Preheat oven to 400F.

  • Cook bacon and bake all of the veggies except for the kale on a baking sheet with olive oil.

  • Meanwhile, crack the eggs in a bowl. Pour in half and half. Whisk!

  • Sprinkle cheddar cheese on the bottom of the pie crusts.

  • Pour egg mixture into the two pie crusts evenly.

  • Crumble up the cooked bacon. Spinkle in cooked veggies and the kale into the egg mixture. I didn't put a specific amount of veggies -- just wing it! Whatever looks good.

  • Add a little salt and pepper to taste.

  • Bake in the oven until eggs are done. About 20 minutes -- not specific so keep checking!

  • Serve up with mashed avocado.
